Ingredients
- 4 Egg whites
- 1 Whole egg
- 1 tablespoon Flaxseed oil
- 2 cups Chopped carrot, tomato, celery, red capsicum and spinach (in total approx. 2 cups of mixed veggies). .
Method
- Whisk the eggs and flaxseed oil together until combined.
- In a lightly oil sprayed frying pan heat chopped carrot, tomato, celery, red capsicum and spinach (in total approx. 2 cups of mixed veggies).
- Add the egg mixture once the spinach starts to soften.
- Fold mixture over as eggs start to become firm.
- Eat immediately!!
