Breakfast Vegetable Omelette

This is a simple and delicious breakfast packed with all the nutrients you need to kick start a perfect nutritional day!

Ingredients

  • 4 Egg whites
  • 1 Whole egg
  • 1 tablespoon Flaxseed oil
  • 2 cups Chopped carrot, tomato, celery, red capsicum and spinach (in total approx. 2 cups of mixed veggies). .

Method

  1. Whisk the eggs and flaxseed oil together until combined.
  2. In a lightly oil sprayed frying pan heat chopped carrot, tomato, celery, red capsicum and spinach (in total approx. 2 cups of mixed veggies).
  3. Add the egg mixture once the spinach starts to soften.
  4. Fold mixture over as eggs start to become firm.
  5. Eat immediately!!
